These health-ified O’Henry bars are actually quite easy to make despite having a few layers. Plus, anything no bake is always a bonus!
BASE LAYER:

1/2 cup coconut flour

1-2 Tbsp nutritional yeast (I use 2)

1 Tbsp maple syrup

1/2 cup peanut butter

1/4 tsp salt
-
1-2 tsp water (only if necessary)
MIDDLE LAYER:

6 large medjool dates, pitted

1 Tbsp maple syrup
-
2 Tbsp almond butter
-
1/2 tsp Vanilla
-
Pinch salt
TOP:

Peanuts to place on top of middle layer (as many as you like, but a few tablespoons should do it).
COATING:

2/3 cup of melted chocolate + 2 tbsp coconut oil

Combine base ingredients by hand/in a blender/food processor. If the mixture is a bit dry (this can happen if your PB is on the dry side) add water 1 tsp at a time until mixture stops flaking when you try to form a ball. When you can form a ball and almost all of the mixture stays together you are ready. Flatten mixture to ~1/4 to 1/2 inch in the form of a horizontal rectangular log.

Blend middle layer in a high-speed blender and place a layer on top of the base (you’ll likely have extra).

Place peanuts on top (as many or as few as you like).

Melt coating ingredients in microwave at 30 second intervals (mix in-between so it doesn’t burn) or on the stovetop.

Vertically cut ~10 bars (~1 inch thick/wide). Make them a bit thinner or thicker based on your preference or on how you shaped your base layer “log”.

Dip and coat each bar by hand in chocolate coating

Place flat on a freezer safe dish and when you’re done pop ‘em in the freezer for at least an hour or the fridge overnight.
