a well balanced weekend breakfast

You read correctly, nothing like sMores to start the day. Healthy fats with some chocolate chips + marshmallows. NBD.  They make a good snack + dessert also 😉

SMORE FAT COOKIES  

INGREDIENTS 

  • 1 egg 
  • 2 tbsp @lees.provisions 50/50 blend (ghee + coconut oil)  (coconut oil will also do the trick) 
  • 1/2 cup smooth almond butter 
  • 1 super packed cup of almond flour  
  • 1/3 cup coconut sugar 
  • 1/4 tsp sea salt 
  • 1/2 tsp baking soda 
  • 1 bar of chocosol chocolate chopped into large chucks. 
  • 2/3 cup @mydandies mini marshmallows 

INSTRUCTIONS 

  1. Preheat Oven to 350 F 

  2. mix together all the wet ingredients - I use my stand mixer  

  3. Add coconut sugar  

  4. Add in the dry ingredients 

  5. Add chocolate chips and marshmallows.  

  6. Chill in the freezer for 10 -15 minutes  

  7. scoop the dough and roll into balls. Place on pan lined with parchment paper 

  8. Press down the cookies with your palm 

  9. Bake 12- 15minutes. 

  10. Let cool before transferring to a cooking rack.
